Wild Game Sausage Biscuits & Gravy

In my opinion, biscuits & gravy are the champion of breakfast (maybe not the healthiest but definitely the tastiest). It is a great way to enjoy some wild game on a weekend morning or at camp on a hunt. 

Sausage Ingredients:

4 lbs of wild game meat

1 lb of pork fat

1/2 cup of Live Wild Sierra Sage seasoning 

2 TB salt

2 cups water

Grind the meat and fat in a meat grinder then mix in the water, seasoning, and salt to flavor ground sausage. Cook a sample peice and add additional season according to taste.

Biscuit Ingredients:

2 ½ cups all-purpose flour

2 tsp sugar

1 cup whole milk

1 TB baking powder

¾ tsp salt

½ cup unsalted butter frozen

1 cup whole milk

Combine dry ingredients and grate frozen butter into the mix with a cheese grater. Then add the milk and mix it together. 

Knead until the dough is throughly mixed. Then make about a inch and a half thick peice and use a round cookie cutter to cut your biscuits out of the dough.

The Gravy Ingredients 

1 pound breakfast sausage

2 cups flour

1 1/2 cups half and half

1/2 cup milk

1/2 cup butter

Preheat your Traeger grill or oven to 350°F.

 Cook the sausage in a cast iron skillet over medium heat until browned.

Remove the sausage from the skillet and set aside.

In the same skillet, melt the butter over medium heat.

Add the flour and whisk until smooth. Cook for 2-3 minutes, stirring constantly.

Slowly add the half and half and milk, whisking constantly to prevent lumps from forming.

Bring the mixture to a simmer and cook for 5-7 minutes, or until thickened.

Add the cooked sausage to the gravy and stir to combine.

Serve the gravy over warm biscuits.
